Is the pinto a valve interference engine
1600 is, 2000 isn't although high lift cams may cause the valves to touch.
would depend on how much has been taken off during skimming and what lift you run on the cam, if you put some plasticine on the top of the piston and refit the head turn the engine by hand on the bottom pulley (crank) do two full turns then lift head back off and measure the depth left on the plasticine and that will tell you how far you can go with either skimming of cam lift
The 2.0 is also non interference.
I had the belt let go on my 2.0S. New belt and tensioner and i was back up and running
But if the engine has had work done skimmed etc, likely not anymore

2.0 IS NON INTERFERENCE
I too can vouch a 2.0 OHC doesn't bend the valves, had a belt go on me at the traffic lights, luckily had the tools to do it all roadside.
I can also vouch that if a follower flips out at an indicated 115mph it doesn't destroy the camshaft or head, or perhaps l was just very lucky.
I can also vouch for the standard 2.0 Pinto is non interference, had the belt let go on my 1st Capri back in 85, new belt fitted & all good
i had a belt go on a 2.0`S` at Snetty on full power and didnt destroy anything but i also had one go on my NOO NOO at Santa pod and bent two valves
